Cranberry-Rosemary Cocktail
The following simple syrup recipe is good stirred into hot apple cider (or cider beer), made into a sorbet or a granita, as a topper for champagne, or as a non-alcoholic beverage with a splash of fizzy water.
1 cup water
1 cup fresh cranberries
1/3 to ½ cup Agave nectar, to taste
1 tablespoon fresh rosemary
1 to 1 ½ tablespoons fresh ginger, grated
Vodka or Gin (or another neutral tasting spirit of your choice)
Directions for Simple Syrup
Place water, cranberries, agave nectar, rosemary and ginger into a small saucepan. Bring to a boil and simmer until cranberries begin to pop open (about 10 minutes). Turn heat off and let mixture steep for 15 minutes. Strain through a fine mesh sieve and chill.
Directions for Cocktail
Make cocktail by mixing 1 part simple syrup to 1 part vodka. Serve over ice and top off with soda or sparkling water. Garnish with cranberries and a rosemary sprig.
