1 cup canned pumpkin
1 cup granulated sugar
½ cup natural applesauce, unsweetened
1 egg, slightly beaten
1 cup all-purpose flour
1 cup all-purpose whole wheat flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
1 tsp ground cloves
1 tsp milk
1 Tbsp vanilla extract
1 cup semi-sweet chocolate chips
1 cup coarsely chopped walnuts (optional and not included in nutritional information)
Preheat oven to 350
1. Combine pumpkin, sugar, applesauce and egg. In a separate bowl, stir together flour, baking powder, cinnamon, nutmeg, ginger, cloves, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.
2. Add vanilla and chocolate chips (chopped walnuts optional).
3. Drop by spoonfuls onto cookie sheet coated with cooking spray and bake at 350 degrees for approximately 10-15 minutes, or until lightly brown.
4. Cool before transferring to air-tight storage container
