Cajun Turkey Breast & Asian Jicama Mango Salad

Yield: 2 portions
14 ounce turkey breast or tenderloin
1 Tablespoon The Body Gourmet Apricot Cajun Creation Healthy Spice Blend or 1 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon cinnamon powder
1 teaspoon curry powder
Asian Jicama Mango Salad:
4 ounces jicama (Chinese yam), peeled and slivered
1/2 ripe mango, peeled, cored, and slivered
1/2 red bell pepper, cored, seeded and slivered
1 teaspoon fresh or dried cilantro, chopped
1 Tablespoon rice wine vinegar
(2) 6 ounce sweet potatoes
Method: Sweet potatoes: Preheat oven to 400 degrees. Wash the outside of the sweet potatoes. Place in the oven on a sheet tray and bake for 40 to 45 minutes or until soft. You can also microwave them for about 15 minutes. When microwaving, be sure to poke a few holes in the skin and flesh and also to turn them every five minutes during the cooking process. While potatoes are baking, begin the turkey breast.
Turkey Breast: Roll the turkey in the healthy spice blends until fully encrusted. These special spices are all natural and utilize the world’s best ingredients to create a total palate sensation. The spicy flavors of the Cajun turkey will marry well with the sweetness of the Asian salad and sweet potatoes.
Heat a nonstick pan until very hot. Place spice crusted turkey in the pan and sear on all sides until dark brown. When completely caramelized, place in the oven and roast until the meat is fully cooked through, about 10 to 15 minutes (time depends upon the thickness of the turkey breast). While sweet potatoes and turkey are baking, make the salad.
Asian Jicama Mango Salad: Add all ingredients to a mixing bowl and mix until well distributed. Set aside until turkey and sweet potatoes are fully cooked and tender.
To Serve: Slice sweet potatoes and place on the bottom of two plates. Thinly slice the turkey and place on top of the sweet potatoes. Top turkey with the Asian salad. Enjoy!
