Labor Day Barbecue

Let’s take the labor out of your Labor Day barbecue! Want to avoid the typical unhealthy hot dog and hamburger barbecue and still make a quick, easy, and healthy meal your guests will enjoy? Then why not try my grilled garlic herb flank steak and vegetable medley?

So you have a very busy schedule, and you have very little time to prepare for your big Labor Day party. All you need is an hour, a gas grill, and a few ingredients. This recipe will give you and your guests a combination of healthy protein, fat, and non-starchy carbohydrates.

Ingredients Steak:
6 oz. flank steak
2 tbsp. minced garlic
2 tbsp. All Natural Braggs
Liquid Amino Soy sauce
2 dashes of pepper
2 dashes of oregano
2 dashes of cumin

Veggies:
1 squash
1 zucchini
1 onion
1 red bell pepper
1 green bell pepper
1 eggplant
 

Cooking Instructions:
Combine minced garlic, pepper, soy sauce, oregano, and cumin in large bowl over steak and let sit in refrigerator, then begin preparing vegetables. Take six pieces of aluminum foil (one for each vegetable), place veggie in center of foil, and wrap each securely, then place wrapped veggies on gas grill over medium heat for 25-35 minutes or until veggies are tender. Once veggies have been cooking for 20 minutes, place marinated steak on grill and cook to your liking between 10 to 20 minutes on each side, depending on your preference. The steak makes one serving; the veggies make two servings. Add more depending on the size of your party.

When done, remove the foil from the veggies and cut them up as desired. Add either balsamic vinegar or fat-free butter spray to the veggies to enhance the flavor.
